Potatoes have notorious reputation.And yes almost everyone loves potatoes. I used to love chips but now since I cook have started to get more with using them as a veggie. One nice way to rid of starch is to wash the potatoes after you cut them... yes after you cut them.This dish goes wonderfully with rotis
Ingredients:
2 potatoes washed and cut into bite size pieces-microwave this for 5 minutes and keep aside
3/4 cup peas
2 finely chopped tomatoes
1/2 finely chopped onion
2 chopped chillies
1 tsp jeera
pinch of hing
1/4 tsp turmeric powder
1/2 tsp chilli powder
1/2 tsp dhania powder
1/4 tsp amchoor powder
1/4 tsp garam masala
1 tsp kasuri methi
salt to taste
2 tbsp oil
1 tsp ginger garlic paste
cilantro to garnish
Method:
1.In a bowl make a concoction of 4 tbsp water,dhania,chilli powder and amchoor powder. Keep aside
2.Take a pan add oil and jeera. After it splutters add the hing and ginger garlic paste and fry till the raw smell goes away.
3.Then add in onion and 1/4 tsp salt. Fry till the oil is light brown.
4.Follow this by the tomatoes,chilli and turmeric powder. Cook till the tomatoes are well done and the oil oozes from the sides.
5.Add the spice concoction to this and mix well so that they are cooked.
6.Pour in the potatoes,peas,kasuri methi and give it a good mix.
7.Add 1/2 cup of water,adjust the salt and let it cook for 15 minutes on a low flame.
8.Sprinkle the garam masala,mix and end with a garnish of cilantro and a dash of lime
